It All Started with a Pepper
A talented girl with a love for food and a lack of work; that’s me. After a long awaited pilgrimage to Southern California to chase a dream, I was stricken with a bad case of unemployment. With not enough work to make ends meet, it was something I’d never really experienced: life on a tight budget.
Certain things are easier to give up, but eating isn’t one of them. So budgeted trips to the grocery store began. There was ample plotting and scheming to choose foods that don’t break the bank and go fairly far. It was a challenge that, at first, made me cringe. Until one night.
After a long day of non-work, I made my way through the fridge to figure out the evenings nourishment. Lacking income, the rapidly aging peppers staring me in the face were a nightmare. You can’t afford to let anything spoil when you’re living on refried beans.
I racked my brain to think of some way to make this work for me. Sick of eating below my palette to stay within my means, I started cutting, dicing, mixing and completely experimenting with the mish-mosh of items I had on hand. The entire time thinking, in the back of my mind, how disgusting this was bound to turn out. What had happened? The girl who lived for great restaurants and cooking wonderful meals was dreading eating because her wallet was worried.
A few household ingredients and 35 minutes later I prepared for the worst first-bite…that turned out to be the best first-bite ever. The Frugal Foodie was born.
